There's nothing quite like the gooey, cheesy, saucy taste of pizza. This cauliflower crust version is no exception. You might be skeptical (like Brad was), but it actually crisps up nicely and all your favorite traditional toppings are here! I won't say it's just as good as regular pizza because hello, carbs. But if you're looking for a lighter, low-carb version look no further!
For the crust you will need cauliflower (obviously), egg, fresh Parmesan, fresh mozzarella, parsley, oregano and basil. Preheat oven to 425. Process cauliflower in a food processor until fine. Transfer to a bowl and microwave for several minutes. Transfer to a towel to dry out. Try to lay out as thin as possible to dry faster. Ring out as much moisture as you can.
Transfer to another large bowl. Add rest of ingredients and mix well. Roll out into round pizza form on a greased baking sheet. Bake for 20 minutes.
Meanwhile prepare your pizza sauce. You will need onion, garlic, tomato sauce, tomato paste, dry red wine, oregano, basil, parsley, red pepper flakes, salt, pepper, bay leaf and olive oil.
In a medium-sized sauce pan heat olive oil. Sauté onion and garlic. Add tomato sauce, paste and red wine and bring to boil. Stir in spices. Reduce heat to simmer for about 30 minutes stirring occasionally.
Remove from oven. Check bottom to ensure desired crispiness.
Remove bay leaf and pour sauce over crust.
Top with fresh mozzarella.
And all ze pepperonis. Bake for 10-12 more minutes.
Top with fresh Parm and basil! Enjoy!
- 1 cauliflower head, chopped into florets
- 1 egg
- 16 oz fresh mozzarella, divided
- ¼ cup fresh Parmesan (more for topping)
- ½ large onion, diced
- 2-3 garlic cloves, minced
- 15 oz can tomato sauce
- 2 tablespoon tomato paste
- splash dry red wine
- 1 teaspoon olive oil
- 1 teaspoon salt, divided
- 1½ teaspoon dried oregano, divided
- 1 teaspoon dried basil, divided
- ½ teaspoon dried parsley, divided
- ½ teaspoon fresh ground pepper
- ½ teaspoon red pepper flakes
- 1-2 bay leaves

- Preheat oven to 425.
- Process cauliflower into a powder-like consistency.
- Transfer to a small bowl and heat in microwave for 5 minutes.
- Transfer to a towel to dry out.
- Squeeze out excess water/moisture and transfer to a large bowl.
- Add egg, 8 oz mozzarella, Parmesan, ½ teaspoon salt, ½ teaspoon oregano, ½ teaspoon basil, ¼ teaspoon parsley and combine well.
- Roll out into a round pizza shape on a greased baking sheet.
- Bake 15-20 minutes or until desired crispiness.
- Meanwhile prepare sauce. Add olive oil to a medium sized saucepan over medium heat.
- Add onion and garlic and sauté for several minutes.
- Add tomato sauce, paste and red wine. Bring to boil.
- Stir in the rest of seasoning. Turn down to simmer.
- Simmer for 30 minutes stirring frequently.
- Remove pizza crust from oven and pour sauce over (after removing bay leaves).
- Top with mozzarella and pepperonis.
- Bake 10-12 more minutes.
- Top with Parmesan and fresh basil.
