Happy Friday! I'm writing to you all today from up at the lake house before heading out on the boat. Tough life. We're up here for a long weekend of bronzing, boozing and boating. And of course eating some amazing food. I found it fitting to share this cocktail with you all as it literally tastes like summer in a glass. It features yellow watermelon. I did not know this was a thing until I was at my Aunt Jill's last weekend and was utterly confused as she cut into what looked from the outside like any other watermelon. My mind immediately went to what kind of fun cocktail can I make with this and she was nice enough to let me take some home... and then I had to keep Brad out of it long enough for me to be able to put some into a shaker LOL. Apparently yellow watermelons are essentially the same as regular pink-red watermelons but they lack lycopene which is what gives that red color (also found in tomatoes). They are actually sweeter and have notes of honey. And they go great in drinks! I combined it with tequila, lemon juice, simple syrup and basil and was not disappointed. You won't be either. - 2 oz tequila
- 0.5 oz simple syrup
- 0.5 oz fresh lemon juice
- 5-6 chunks of yellow watermelon, seeds removed
- 2-3 basil leaves, torn
- ice
- extra watermelon and basil for garnish
- Add all ingredients to a shaker.
- Muddle basil and watermelon well.
- Add ice and shake for 30 seconds.
- Dump into a tall glass.
- Garnish with basil and watermelon.
