Hi everyone! My apologies for the delay in posts lately. For those who don't know we bought a house! Things were a little crazy as we closed on 7/26 and had to be out of our previous home on 7/31. Since then I've been focusing my time on getting settled, and my best friend has also been in town! I have some exciting posts coming on some recent hotel and bar/restaurant openings I was invited to check out. But for now I want to share this tasty cocktail which is appropriate as I'm also sharing our exciting house news! The Tuscan Bellini is easy to make and perfect to sip on during the Bachelor in Paradise tonight!
The only things you need for this cocktail are peaches, lemon juice, simple syrup (optional) and Prosecco. Ripe peaches work best (did you also know August is national peach month?!). I usually only add the simple syrup if the peaches are very tart. Since they can differ in sweetness you might not need the simple syrup at all. Peel your peach and cut into small slices. Add to a shaker with lemon juice and simple syrup. Muddle well. Add ice and shake. Strain into a champagne flute (use a double strainer to make sure there's no peach chunks). I also love to use chilled flutes for this. Top with Prosecco! Cheers!
- 1 ripe peach, peeled and chopped into small pieces
- 1 oz fresh lemon juice
- 0.5 oz simple syrup (optional)
- Chilled Prosecco, to top
- Slice of peach to garnish
- Add peach, lemon juice and simple syrup to shaker.
- Muddle well.
- Add ice and shake.
- Double strain into a champagne flute.
- Top with Prosecco.
