Today is National Pasta Day! And I'm doing a sponsored post with Banza for it! Have you heard of Banza? They're a brand with a variety of pasta and rice products made from chickpeas. Lower in calories and carbs than regular pasta yet higher in fiber. Also gluten free! And it tastes pretty damn close to the real thing. Especially if you dress it up!
I used Banza's Mac & Cheese for this post which is actually damn good all on its own. But me being me had to make it my own. So I added in some lobster tails, butter, garlic, grape tomatoes, white wine, broccoli and fresh Parmesan.
Melt some butter in a saute pan over medium heat. Add garlic and tomatoes and cook for a few minutes.
Add some dry white wine and swirl pan to incorporate. Cook about a minute then stir in broccoli.
Stir and bring to a slight simmer.
Add some salt, pepper and red pepper flakes and then your lobster tails. Simmer for a few minutes until cooked through. Lobster tails are already cooked so you're just reheating them. Also okay to use lobster meat (already removed from lobster in seafood department) if tails are unavailable.
Meanwhile, prepare Banza Mac & Cheese per package directions.
Toss in lobster and stir to combine.
Throw in your veggie mixture and also stir to combine.
And some fresh Parm bc why not.
Transfer to a large pasta bowl.
And serve! As always, I only promote products I actually really love and use myself. Trust me, you can't go wrong with Banza. And obviously a little lobster. 😉

- 1 box Banza Mac & Cheese
- ¼ cup skim milk
- 4 tbsp. butter, divided
- 3 cloves garlic, minced
- ⅓ cup grape tomatoes, chopped
- ½ cup dry white wine
- 1 cup broccoli, chopped
- 1 teaspoon salt
- 1 teaspoon fresh ground pepper
- ¼ teaspoon red pepper flakes
- 2 lobster tails or 8 oz fresh lobster meat
- ¼ cup fresh Parmesan
- Melt 2 tablespoon butter in a large saute pan over medium heat.
- Add garlic and tomatoes and saute for 3 minutes.
- Add white wine and simmer for a minute.
- Add broccoli and cook for a few minutes.
- Add spices and lobster tail.
- Simmer for a few more minutes or until lobster is heated through.
- Remove lobster to a plate and let cool for a minute then remove meat.
- Saute mixture until broccoli is cooked through.
- Meanwhile prepare Banza according to package directions stirring in milk and remaining butter at the end.
- Stir in lobster meat, then veggies.
- Stir in Parm.
