Happy Memorial Day!!! I hope wherever you are in the world, you have weather as perfect as ours has been this weekend. I've spent the day sitting out in our backyard, soaking up the sun, reading a book and of course sipping on a refreshing cocktail. It is a littleeee hot without a pool though, so now I'm onto pestering my husband about when we can put one in. 🙂 Bring on the pool parties and froze. Brad and I grilled out burgers for lunch with a side of baked beans I made in a cast iron (I will share the recipe soon) and this salad! I'm calling it the Avo, Tomato & Corn salad, as those are the MAIN ingredients, but it also contains cucumber, jalapeno and fresh cilantro (aka what I had in my fridge and decided to throw into a bowl). yummmmm
The dressing is a mixture of olive oil, fresh lemon juice, cumin, salt & pepper. Whisk together in a small bowl then pour over and mix with your veggies. This salad is seriously so easy to make. It took like five minutes. Maybe. And we all need some cold side dishes when the temps rise! Serve right away or chill in your fridge for at least 30 minutes. I find it ideal to chill before serving so the veggies can soak up that tasty dressing. We're eating this as a side with our dinner tonight too... main dish being flank steak on the grill aka our favorite grill recipe ever thanks to my FIL the OG Pendy. I'll share that sacred recipe as well if I'm given permission. 😉 Enjoy the remainder of your MDW!
- ¼ cup olive oil
- juice from one fresh lemon
- 1 teaspoon salt
- ½ teaspoon fresh ground pepper
- ½ teaspoon cumin
- 1½ cups grape tomatoes, halved
- 2 avocados, pitted and chopped
- ½ cup corn (thawed frozen corn or grilled fresh corn removed from cob)
- ½ cucumber, chopped into wheels or half wheels
- 1 jalapeno, minced (leave out if you don't like spice)
- 2 tablespoon fresh cilantro
- Whisk together olive oil, lemon juice, salt, pepper and cumin in a small bowl. Set aside.
- In a medium-sized salad bowl, mix together rest of ingredients.
- Drizzle dressing over top and mix.
- Serve right away or chill in refrigerator.
