Avocado toast with eggs and salmon is one of my favorite breakfast options. Obviously avocado toast is known as the ultimate millennial dish, and for good reason. It's truly a delicious duo. I love to customize my version with all kinds of tasty ingredients beyond the original two though. My Avocado Toast with Eggs and Salmon ingredients:
For my version you'll need toast (obviously). My favorite is fresh sourdough. I grab a loaf from the bakery at my local grocery store. You can use whatever you'd like though. You'll also need avocado, smoked salmon, egg, Everything Bagel seasoning, fresh dill and capers. Customize your toast however you'd like if you don't want to use all of these ingredients or if you'd like to add even more!
Smoked Salmon:
One of the stars of my avocado toast is the smoked salmon. When we were in Dominican Republic at Eden Roc Resort, they had the most amazing restaurant that served delicious brunch options daily. Their smoked salmon avocado toast on sourdough was one I ordered multiple times. Smoked salmon just feels fancy to me, but it's honestly one of the easiest, inexpensive additions to a dish! And it lasts a long time. Pick some up from the seafood section of your local grocery store or Costco (which is where I got mine). It lasts about 2 weeks unopened in the refrigerator and five days once opened. Since it's completely cooked and typically pre-sliced there is zero work to be done. You can also freeze unopened packets up to 6 months.
Capers:
If you have never had capers before they are bold, savory and salty. You can generally find them near olives at the grocery store. They are totally optional here, but I like the addition of them.
Everything Bagel Seasoning:
This amazing seasoning is a mixture of sesame seeds, poppy seeds, dried garlic and onion and sea salt flakes. It goes great on so many things, but I especially love adding it to breakfast sandwiches and toasts. Here's the one I use:
Instructions for Avocado Toast with Eggs and Salmon:
Now when I say this dish is easy I mean EASY. Minimal cooking required. Prepare toast at the same time as you're cooking your eggs. Once the toast is ready, use a fork to smash avocado across. Add a layer of smoked salmon, top with egg then sprinkle with a little seasoning, capers and fresh dill. A squeeze of fresh lemon is also nice.
Preparing the Poached Eggs:
To poach eggs I put each one in a teacup. (Yes, you read that correctly. It’s the simplest and safest way to drop them directly into the boiling water.) Bring water to boil in a large pot with a little vinegar. Lower the teacup into the water until it starts to get warm, then carefully tip the teacup and pour the egg into the water. Repeat with other eggs. Cook each egg for about three minutes to ensure they are still runny.
Can I use Fried Eggs?
Sure! You'll still get the runny yolk. I prefer poached eggs for this toast though. It reminds me of Eggs Benedict.

Ingredients
- 3 slices sourdough bread
- 1 avocado halved, seed removed
- 3 slices smoked salmon
- 3 poached eggs directions in post
- Everything Bagel seasoning to taste
- capers optional
- fresh dill optional
- fresh lemon optional
Instructions
- Toast sourdough slices to desired crispiness. Meanwhile cook eggs.
- Smash avocado across toast with fork.
- Top with salmon then egg.
- Sprinkle with seasoning, capers and dill.
