These Brie & Prosciutto Crostini with Cranberry and Mint are the perfect Thanksgiving appetizer, not only because they are delicious but if you're already making/buying cranberry sauce you can also use it here! They're great for any holiday party though. What is "crostini"?
It means "little crusts" aka "little toasts" in Italian. Variations on crostini are some of my favorite hors d'oeuvres. You'll find many on this blog. Some are linked below.
Ingredients for Brie & Prosciutto Crostini with Cranberry and Mint:
You'll need a French baguette, a wheel of Brie, Prosciutto, fresh mint, cranberry sauce, balsamic vinegar, brown sugar, and toothpicks.
Homemade Cranberry Sauce:
Store bought works fine, but if you're planning to make your own it's easy! Simply add cranberries, sugar, an orange slice and a little water to a small saucepan. Bring to a slight boil then turn down heat and stir until sugar dissolves. Allow to simmer for about 5 minutes then set aside to cool.
How to make Brie & Prosciutto Crostini with Cranberry and Mint:
Preheat oven to 400 degrees. Cut the French baguette into ⅓ inch slices and brush with olive oil. Bake for about 10 minutes on a baking sheet. To assemble crostini start with a layer of cranberry sauce. Next, add Brie. I usually remove the rind, because it has a strong bitter taste that not everyone is a fan of. Place a thin strip of Brie on the crostini, followed by a folded slice of Prosciutto and top with one small mint leaf. Secure with a toothpick.
The Balsamic Glaze:
Make your glaze by adding balsamic vinegar and brown sugar to a small saucepan. Bring to boil over high heat then turn down heat to a simmer. Stir frequently until the sugar melts and sauce thickens. Allow to cool then drizzle crostini with sauce and serve!
Note about serving Brie & Prosciutto Crostini with Cranberry and Mint:
This is a great dish to make ahead of time to cut down on last minute work or to stay out of your hosts way during crunch time. I would recommend adding the balsamic drizzle right before serving though, so the crostini don't become soggy.

Brie & Prosciutto Crostini with Cranberry and Mint
Ingredients
- French baguette cut into ⅓-inch slices
- 2 tablespoon olive oil
- 1 wheel Brie sliced to fit crostini, rind removed
- 3 oz Prosciutto sliced and rolled
- 1 small can cranberry sauce (or easy homemade, see note in post)
- fresh mint
- ¼ cup balsamic vinegar
- 2 tablespoon brown sugar
- toothpicks
Instructions
- Preheat oven to 400 degrees.
- Brush crostini with olive oil.
- Toast in oven for about 8-10 minutes flipping halfway through.
- Meanwhile heat balsamic vinegar and brown sugar in small saucepan over medium heat. Bring to simmer, stirring to dissolve sugar. Simmer on low 5 minutes or until sauce has thickened. Set aside to cool.
- Allow crostini to cool then spread with cranberry sauce.
- Add Brie.
- Then Prosciutto.
- Top with small mint leaf. Secure with toothpick.
- Drizzle with balsamic glaze right before serving.
