We're halfway through the week! 4th of July weekend is almost here, one of my favorite weekends of the year. I'm heading up to my fiancé's family lake house for a few days for a much needed break. Looking forward to boating, fireworks, spending time with friends and family and cookouts! Which brings me to this Cajun Shrimp Skewer recipe - perfect for any get together that involves food and a grill. You will need shrimp (peeled and deveined), Cajun seasoning, olive oil, lemon juice, garlic powder, salt, ground pepper, bell peppers and onion. Oh and wooden skewers!
Heat grill to medium/high. Drizzle shrimp with olive oil and lemon juice. Toss with Cajun seasoning, garlic powder, salt and pepper.
Toss peppers and onion with a little olive oil, salt and pepper.
Skewer shrimp with peppers and onions spaced in-between. Place skewers on grill and cook for about 2-3 minutes per side. Let cool before serving. Enjoy!
- 1½ lb shrimp (peeled and deveined)
- 1 tbsp. olive oil + 1 tsp. olive oil
- 1 tbsp. fresh lemon juice
- 1 tsp. garlic powder
- 1 tbsp. Cajun seasoning
- 1 tsp. salt
- ½ tsp. ground pepper
- 2 bell peppers (red, yellow, orange or green), sliced
- 1 large onion, sliced
- wooden skewers

- Toss with garlic powder, Cajun seasoning, salt and pepper.
- Toss peppers and onion with 1 tsp. olive oil, salt and pepper.
- Skewer shrimp with peppers and onion slices in between.
- Grill for about 2-3 minutes per side.
