My favorite way to get in my servings of vegetables is to cover them in cheese and butter. I mean whose isn't? While this isn't the healthiest broccoli recipe it sure is one of the tastiest I've had. And it's great for you keto or low-carbers!
For this side dish you will need heads of broccoli, butter, flour, salt, pepper, milk (at least 2%) and cheddar cheese. Preheat oven to 350. Steam broccoli in a steamer or over a pot of boiling water. In a small sauce pan add butter and melt over medium heat. Stir in flour, slowly, a little at a time. It will begin clumping.
Stir in milk, slowly, a little at a time. It will begin to thicken. Stir in salt and pepper.
Turn off heat and add cheese. Stir until melted and well incorporated. Remove from heat.
Transfer broccoli to a baking dish.
Pour cheese over the top, stir to incorporate and bake for 20 minutes.

- broccoli heads (about 2 cups) chopped and steamed
- ¼ cup butter
- ¼ cup flour
- 1 teaspoon salt
- ½ teaspoon pepper
- 2 cups milk (2% or whole)
- 1 cup cheddar cheese

- Transfer broccoli to a baking dish.
- Pour sauce over top and stir to incorporate.
- Bake for about 20 minutes.
