You guys.... this salad is so good let me tell you. It's light but filling, flavorful, easy to make and super healthy! This is the perfect salad to bring to parties or cookouts. It also makes a great option for lunch. I actually made this recipe on Sunday and brought it to work for lunch a couple days this week. I love chickpeas in just about anything (see my hummus recipe). They are full of protein, fiber and lots of other great stuff.
For this salad you will need: chickpeas, cucumber, red bell pepper, grape tomatoes, parsley, fresh lemon juice, olive oil, salt, pepper, oregano, paprika & feta. That's it! You simply chop up the veggies, combine them with everything else, add your olive oil and lemon juice and toss with your seasoning. This salad is so fresh tasting it the perfect welcome to Spring! Enjoy!
- 2 cans chickpeas/garbanzo beans, drained and rinsed
- 1 red bell pepper, seeded and chopped
- ½ cup grape tomatoes, halved
- 1 cucumber, chopped
- 2 tbsp. fresh parsley, chopped
- juice of one large lemon
- 1½ tbsp. olive oil
- 1 tsp. salt
- 1 tsp. pepper
- ½ tsp. oregano
- ½ tsp. paprika
- 3 tbsp. feta cheese, reduced fat
- Add all ingredients to a large bowl and toss. Store in fridge.
