Have I mentioned before how much I love Chipotle? Probably. So much that I've mastered many copycat recipes through much trial and error. I remember at some point during college going to Chipotle with a friend and her saying to me, "you don't get the salad dressing?" My life was changed that day. Now this Chipotle Honey Vinaigrette recipe I had an extra difficult time perfecting, but I think it's just right now.
For this simple recipe you will need red wine vinegar, honey, chipotles in adobo sauce, garlic, oregano, salt, and pepper. Simply add all ingredients to a food processor and pulse until smooth. Store in an airtight container in the fridge if not all is used. This tastes great over salads as well as burritos, burrito bowls, or as a marinade! Enjoy.
- 4 tbsp. red wine vinegar
- ¼ cup honey
- 3 chipotle peppers
- 2 tbsp. adobo sauce
- ¾ cup vegetable oil
- 2 garlic cloves
- ½ tsp. oregano
- 1 tsp. salt
- ½ tsp. pepper
- Add all ingredients to a food processor and pulse until smooth.
- Serve immediately or store in an airtight container in the fridge.
