Whole Roasted Walleye

- 2-3 whole trout, filleted
- 3 tbsp. olive oil, divided
- salt & pepper
- 10 garlic cloves, minced
- ½ tsp. red pepper flakes
- ¼ tsp. paprika
- 1 lemon, sliced into rounds
- sprigs of thyme, oregano, rosemary and sage
- 2-3 tomatoes, sliced
- Preheat oven to 450.
- Spray a baking sheet with nonstick spray.
- Rinse fish in cold water and dry with paper towel.
- Drizzle with olive oil.
- Season with salt and pepper.
- In a small bowl combine tbsp. oil, lemon juice, garlic, red pepper flakes & paprika.
- Spread inside of fish.
- Add lemon slices and sprigs to inside of fish as well.
- Place tomatoes around fish. Drizzle with remaining oil and season with salt and pepper.
- Bake for 20 minutes.
