Stuffed Pepper Soup

Ingredients
  • 1 lb ground beef (93-96% fat free preferably)
  • 1 small onion, diced
  • 2 green bell peppers, chopped into bite-sized pieces
  • 2-3 garlic cloves, minced
  • 1 32-oz can tomato sauce
  • 1 32-oz box of beef broth (more if you'd like it more brothy)
  • 1 tbsp. chili powder
  • 1 tsp. cumin
  • ½ tsp. cayenne
  • 1 tsp. salt
  • 1 tsp. fresh ground pepper
  • 1 cup rice, cooked according to package directions
Instructions
  1. In a large stockpot brown ground beef over medium heat.
  2. Add onion and sauté for a couple minutes.
  3. Add green pepper and sauté a couple more.
  4. Add garlic and cook another minute.
  5. Pour in tomato sauce and beef broth. Stir well to incorporate.
  6. Bring to boil. Stir in spices.
  7. Turn heat down and simmer for about 30 minutes.
  8. Stir in rice and serve.
