Shrimp Fra Diavolo

Ingredients
  • 2 tbsp olive oil, divided
  • 1 lb shrimp, peeled and deveined
  • 8 cloves of garlic, minced & divided
  • 1 shallot, minced
  • 1 tbsp red pepper flakes (adjust to preference)
  • 32 oz can crushed tomatoes
  • 1 cup water
  • 2 tbsp fresh parsley
  • 2 tbsp fresh basil
  • 1 tsp salt
  • 1 tsp fresh ground pepper
  • 1 lb whole wheat pasta (i.e. spaghetti, linguine)
  • fresh Parmesan, to top
Instructions
  1. Heat 1 tbsp olive oil in a large stockpot over medium heat.
  2. Add 2 of the garlic cloves and saute for a minute or two.
  3. Add shrimp and saute 4-5 minutes or until pink. Remove to a plate but keep warm.
  4. Add the rest of the olive oil and heat.
  5. Add shallot and rest of garlic and saute for 4 minutes over medium-low heat.
  6. Add red pepper flakes and saute another 4 minutes.
  7. Stir in crushed tomatoes and water and bring to boil.
  8. Add salt and pepper. Reduce heat to low and simmer for 15 minutes.
  9. Prepare pasta according to package directions.
  10. Add parsley and basil to pot and simmer 5 more minutes.
  11. Drain pasta and top with sauce, shrimp and Parm.
