Lobster Banza Mac & Cheese with Veggies

Ingredients
  • 1 box Banza Mac & Cheese
  • ¼ cup skim milk
  • 4 tbsp. butter, divided
  • 3 cloves garlic, minced
  • ⅓ cup grape tomatoes, chopped
  • ½ cup dry white wine
  • 1 cup broccoli, chopped
  • 1 tsp salt
  • 1 tsp fresh ground pepper
  • ¼ tsp red pepper flakes
  • 2 lobster tails or 8 oz fresh lobster meat
  • ¼ cup fresh Parmesan
Instructions
  1. Melt 2 tbsp butter in a large saute pan over medium heat.
  2. Add garlic and tomatoes and saute for 3 minutes.
  3. Add white wine and simmer for a minute.
  4. Add broccoli and cook for a few minutes.
  5. Add spices and lobster tail.
  6. Simmer for a few more minutes or until lobster is heated through.
  7. Remove lobster to a plate and let cool for a minute then remove meat.
  8. Saute mixture until broccoli is cooked through.
  9. Meanwhile prepare Banza according to package directions stirring in milk and remaining butter at the end.
  10. Stir in lobster meat, then veggies.
  11. Stir in Parm.
