Tzatziki Sauce

Ingredients
  • 1 large cucumber, peeled, seeded (with spoon) and chopped
  • 1½ cups plain Greek yogurt (thicker yogurt yields thicker consistency)
  • 3 garlic cloves, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1½ tsp red wine vinegar
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • salt and pepper to taste
Instructions
  1. Throw your chopped cucumber into a strainer and sprinkle with salt. Allow to dry out for 20-30 minutes.
  2. Add all ingredients to a food processor, blender or bullet. Process until smooth.
  3. Serve right away or store in an airtight container for up to three days.
