Saturday night is the perfect time for a new cocktail recipe! Nothing like a martini highlighting cucumber to take the edge off of a 90 degree summer night. This drink also contains gin, ginger-infused simple syrup, fresh ginger slices, mint and soda. The first time I had a "cucumber martini" was at a Pelotonia happy hour fundraiser in NYC. The bar that hosted the event had green cucumber Pelotonia themed cocktails. A coworker bought my friend Kristen and I one and it was literally one of the worst things I've ever put in my mouth. Like I don't even know what was in this thing that made it so bad, but definitely some kind of artificial cucumber taste and wayyyyy too much of it. We had to sneak to the bathroom to dump it out and this is coming from a girl who went to OU and can drink pretty much anything. I promise this one is much much better and also Pelotonia-season appropriate. Cheers!
**To make ginger-infused simple syrup bring ½ cup sugar and 1 cup water to boil in a small saucepan. Add large chunks of ginger and turn down to simmer 5-8 minutes. Cool completely before serving. Discard ginger.**
**Slapping the mint leaf garnish between two hands prior to serving releases the mint scent enhancing your sipping experience.**
- 1.5 oz gin
- 0.5 oz ginger-infused simple syrup
- fresh ginger slices
- 5-6 fresh mint leaves
- 4-5 cucumber slices
- 0.5 oz lemon juice
- club soda
- Add gin, simple syrup, ginger, lemon juice, mint and cucumber to a shaker.
- Muddle well.
- Add ice and shake for 30 seconds.
- Strain into a glass.
- Top with club soda.
- Garnish with a slapped mint leaf.
