This is what I like to call Gourmet Grilled Cheese. Why gourmet? Because not only does it have two types of cheese (well three because the cranberry walnut spread includes cream cheese) but also a fried egg on top! This is not your average grilled cheese. It's actually also a copycat recipe. A couple years ago when Brad and I were in Indy for the Rascal Flatts concert we went to the most adorable, trendy brunch spot called Milk Tooth where I ordered a very similar sandwich. Brad was extremely jealous he didn't get the same thing. I had to recreate it once we got home!
For the Gourmet Grilled Cheese you will need rye bread, Pepperjack cheese, Jalapeno Colby cheese (or just Colby is fine), cream cheese, walnuts, dried cranberries, orange zest, and butter.
To make your spread mix together cream cheese (I put it in the microwave for about 15 seconds first, making it easier to combine), with walnuts, dried cranberries, and orange zest. Spread this on one side of your rye bread. Heat a skillet over medium heat and melt butter. Stack other side of rye bread with your Colby and Pepperjack cheeses. Place sandwich on skillet and flip once bottom side has a nice brown toast. Meanwhile fry up your egg. When both sides of grilled cheese are a crispy brown and the cheese has melted (couple minutes per side), transfer to a plate.
Look at that gooey cheese. Yummm.
Top sandwich with your fried egg and serve! This sandwich is great and very filling on it's own or served with soup making it perfect for fall. Enjoy!

- 2 slices of rye bread
- 1 slice of Pepperjack
- 1 slice of Jalapeno Colby (or Colby)
- 1 tbsp. cranberry-walnut spread (cream cheese, dried cranberries, walnuts, orange zest)
- 1 tbsp. butter
- 1 fried egg
- Make your cranberry-walnut spread by mixing together all ingredients in a small bowl.
- Melt ½ tbsp. butter in a small skillet over medium heat.
- Spread cranberry-walnut mixture onto one side of rye bread.
- Place slices of cheese on the other and combine.
- Fry grilled cheese until the bottom is a toasty brown, then flip.
- Fry your egg.
- Once your grilled cheese is perfectly toasted and the cheese has melted (couple minutes each side) remove to a plate.
- Top with fried egg.
