After spending the last week at our lake house consuming lots of burgers, hot dogs and beer, I'm definitely craving some healthy, flavorful salads. This Greek Salad is one of my favorites! Packed full of tomatoes, cucumber, pepperoncini peppers, red onion, Kalamata olives and feta served over romaine and then drizzled with a zesty Greek Vinaigrette - you'll feel like you're in the Mediterranean.
For the dressing you'll need a combo of EVOO, red wine vinegar, dijon mustard, onion powder, garlic powder, basil, oregano, red pepper flakes, salt and pepper. Shake up well in a salad shaker and top your salad right before serving. This dressing goes great on just about any salad btw!

- 1-2 heads of romaine lettuce, chopped
- 1 large tomato, chopped
- 1 medium cucumber, chopped
- pepperoncini peppers, sliced
- red onion, sliced in long thin strips
- Kalamata olives, pitted and chopped
- ½ cup feta cheese
- ¼ cup EVOO
- ⅓ cup red wine vinegar
- ½ tablespoon Dijon Mustard
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1 teaspoon basil
- ¼ teaspoon red pepper flakes
- ½ teaspoon salt
- ½ teaspoon pepper
- Add olive oil, vinegar, mustard and spices to a salad dressing shaker. Shake well until combined.
- Add rest of ingredients to a large serving bowl. Toss to combine.
- Drizzle dressing over top and toss again.
