I apologize for my lack of posts in the past week! I promise I have a very good reason and not just Thanksgiving. My boyfriend surprised me with an early Christmas gift... three kittens! Our Siamese kitty Phoebe passed away last summer, and we were both devastated. She was so incredibly sweet and was our baby. Lately, I've felt ready to get another pet and have missed not having a fur baby around the house especially when Brad isn't home. We were out at dinner last Monday before Thanksgiving, and he told me we were going to pick up not one, but three Siamese kittens the following morning! We wanted to get two so they could keep each other company while we're gone at work all day, but they only had three left and we just couldn't leave one behind! I'm so glad we did, because I could not imagine not having all three now. We've had our hands full, in a good way, ever since. I just have to share a picture with you all:
I mean seriously how cute are they?!? Penny is on the right sitting up. She's a Seal Point Siamese. Prue is in the front and Piper in the back. They are Lynx/Tabby Point Siamese. Currently they're peacefully sleeping on their new cat tree giving me an opportunity to post this amazing Meatloaf recipe. Or so they can keep me up all night wrestling with each other. (Probably the latter).
Anyway, Meatloaf! I call this recipe I adapted from my parent's original recipe, Ma the Meatloaf! If you don't get it, then please do yourself a favor and watch Wedding Crashers. Like, yesterday. I still consider it one of the funniest movies of all time.
For my meatloaf recipe you'll need ground chuck, ground pork, diced onion, minced garlic, ketchup, breadcrumbs, an egg, paprika, chili powder, oregano, cayenne, dry mustard, salt, pepper, beef bullion, and flour. Start by preheating oven to 375 degrees.
Mix all ingredients (aside from flour and beef bullion) together in a large bowl. These ratios should be just about perfect, however if your meatloaf feels a little too dry, add more ketchup and if it feels a little too moist, add breadcrumbs.
Form into a loaf-like shape and place in a large baking dish. Spread ketchup over the top. I know it doesn't look super appealing in this picture, but trust me the end result is amaze-balls. Add some water and a beef bullion cube to the dish and bake for 1 ½ hours. Check occasionally and add more water as it slowly evaporates off.
Your meatloaf should look something like this when you remove it from the oven. Set it aside to cool and pour broth from the pan into a small saucepan to prepare your gravy.
Bring sauce to boil and add a beef bullion cube, stirring to dissolve. Turn down heat slightly and add a mixture of flour and cold water stirring constantly. Simmer until the gravy has thickened, about 3-5 minutes.
Slice and top with gravy! Enjoy!!

- ½ lb ground pork
- ½ medium sized white onion, diced
- 2-3 garlic cloves, minced
- 1 egg
- 1 cup breadcrumbs
- ½ cup ketchup
- 1 tsp. oregano
- ½ tsp. chili powder
- ½ tsp. paprika
- 1 tsp. salt
- ¼ tsp. cayenne
- ½ tsp. dry mustard
- ½ tsp. pepper
- 2 beef bullion cubes
- 2 tbsp. flour
- ⅓ cup cold water
- Preheat oven to 375 degrees.
- In a large bowl mix together beef, pork, onions, garlic, breadcrumbs, ketchup, egg, chili powder, oregano, paprika, salt, cayenne, dry mustard, and pepper together. (If it feels too dry add more ketchup, if too moist add more breadcrumbs.)
- Form into a loaf-like shape and place in a large baking dish. Spread ketchup over the top. Add a little water and a beef bullion cube to the dish.
- Place in oven and bake 1½ hours. Check occasionally and add water as it evaporates off.
- Remove from oven when done and allow to cool while preparing gravy.
- Prepare mixture of cold water and flour in a small bowl. It should form a gravy-like consistency. Add more flour/water as necessary.
- Pour sauce from pan into a small saucepan and bring to boil.
- Add a beef bullion cube and stir to dissolve.
- Add flour/water mixture to gently boiling sauce, stirring constantly until dissolved.
- Turn down heat to low and simmer for about 3-5 minutes.
- Slice meatloaf and pour gravy over top.
