Oh haaay Wednesday night! Already halfway through the week and that much closer to the Super Bowl! I'm actually taking off Friday for my fiancé's birthday, so I'm almost done. (Be jealous.) Anyway aside from my mind being on birthday celebratory activities it is also on what I'm making Sunday and what recipes I can share with you all to make for your own Super Bowl parties. Mac & Cheese is the definition of comfort food. This is actually my mom's recipe which is why I've coined it Mama G's Mac & Cheese. 🙂 Thanks mom for allowing me to make the best Mac evvvver!
For this decadent cheesy dish you will need elbow macaroni, butter, flour, heavy whipping cream, cheddar cheese (marbled cheddar pictured), yellow onion, chicken bullion cube, dry mustard, breadcrumbs salt and pepper.
*Using cream and cheese that are at room temperature makes for a creamier dish.*
Preheat oven to 350 degrees. Bring water to boil in a medium-sized pot and cook pasta al dente. Drain but do not rinse. While pasta is cooking prepare your cheese sauce. Melt butter in a saucepan and sauté onion until tender (3-4 minutes). Stir in flour, salt, and pepper.
Once flour has dissolved into mixture add cream all at once. Stir until thick and bubbly. Add chicken bullion and dry mustard and stir until dissolved.
Add cheese, turn off heat, and stir until melted.
Spray a baking dish with nonstick spray. Dump in macaroni and break up with a spatula. Pour cheese sauce over the top and stir a bit to incorporate. Sprinkle with breadcrumbs. Bake for about 35 minutes.
Allow to cool before serving. And that's it! You'll be serving the creamiest cheesiest Mac at the Super Bowl party! 😉

Guess what your dad wants tonight? I added a little Gruyère and Parmesan. Mostly cheddar. Gotta mix it up once in a while plus I had it 😉
