It's Taco Tuesday! This recipe isn't a taco... but it is Mexican. Mexican Pizza. Two of the best types of food combined. So I vote it counts. This is one of my mom's favorite Mexican dishes to order out. I've perfected an at-home version and it is super easy!
For this recipe you will need: ground beef, picante salsa, tortillas, refried beans, shredded cheese, tomato, avocado, cilantro, green onion, and a taco spice mixture (I make my own - chili powder, cumin, cayenne, garlic powder, onion powder, oregano, paprika, salt & pepper).
Preheat oven to 400 degrees. Start by browning your ground beef. Once browned, drain off grease, add ¾ cup water and your taco seasoning, bring to boil, then reduce heat and simmer until fully absorbed. Remove to a plate lined with a paper towel.
Meanwhile, fry up your tortillas. Add about ¾ inch of vegetable oil to a large skillet and heat over medium heat. Once you start seeing steam come off the oil, add your first tortilla. **Careful not to get oil too hot.** Fry about 20-30 seconds per side or until each side turns golden brown and begins to bubble. Once done, remove to a paper towel to drain excess oil.
Start building your pizzas. Place two tortillas on a baking sheet lined with aluminum foil. Warm refried beans in the microwave for about 1 minute, stirring after 30 seconds. This makes them easier to spread on the tortillas. Top beans with ground beef.
Place top tortilla on. Then spread salsa on the top of each pizza.
Top with shredded cheese and line the outsides of the pizza with fresh tomato.
Bake at 400 degrees for about 10 minutes.
Add fresh cilantro, avocado and green onion around the edges as well.
Finish with a dollop of sour cream in the center. I usually cut these into four pieces to serve. One pizza is very filling so this recipe could make 2-4 servings. I usually can only eat half! Also - this recipe goes great with margs. Just sayin' 😉 Cheers!

- taco seasoning (1 tbsp. chili powder, ½ tbsp. cumin, ½ tsp. cayenne, ½ tsp. garlic powder, ½ tsp. onion powder, 1 tsp. paprika, ½ tsp. oregano 1 tsp. salt, ½ tsp. fresh pepper)
- Preheat oven to 400 degrees.

- Meanwhile, heat oil in a large skillet (about ¾ inch oil) over medium heat. Once heated, add tortilla. Fry tortilla about 30 seconds per side or until lightly browned and bubbly. Remove to a plate lined with paper towels.
- Place two tortillas on a baking sheet lined with aluminum foil.
- Spread each with the refried beans.
- Top with ground beef.
- Place top tortillas on.
- Spread each with the salsa.
- Cover with shredded cheese.
- Line outside with tomatoes.
- Bake for about 8-10 minutes.
- Line edges with cilantro, avocado, and green onion.
- Add dollop of sour cream to the center.
