I hope you all had a fun, fantastic, patriotic Memorial Day weekend! We had a great cookout yesterday with family and friends and luckily the weather and food couldn't have been better! I'm glad it's already Tuesday, but today was the Mondayest Tuesday ever. It's always hard to go back to work after a nice long weekend. So today I thought I'd share with you one of my favorite week day recipes. This started out as a recipe my parents frequently made for me growing up, which I always looked forward to, but that I have since tweaked a little to make my own. These Pork Chops are breaded with fresh herbs, seared in a little olive oil, and then baked causing them to become extremely savory and tender.
Start out by trimming the fat off the pork chops and preheating your oven to 375 degrees. Whisk together a little milk with two eggs in a small bowl. Mix fresh parsley and thyme with some breadcrumbs in another bowl or plate, and place some flour in a third bowl or plate. First coat each chop in a little flour, shaking off excess. Next, add to the milk/egg mixture, again shaking off the excess. Lastly, place the chop in the breadcrumb/herb mixture, turning to coat. Meanwhile, as you repeat with the rest, heat up some olive oil in a medium-large saucepan over medium heat.
Sear for about two minutes per side. Next, move each pork chop to a large baking dish. Add a little water to the bottom of the dish. Place the dish in the oven and bake for an hour and a half. Make sure to continue adding water as they cook so they don't burn.
And that's it! Although this recipe takes some time to cook the prep work is fast and easy. You can throw it in the oven and get whatever else done while they cook making it ideal for a busy work week. I hope you enjoy them as much as I do!
- 4-5 small pork chops
- ⅓ cup flour
- 2 eggs
- 1 tbsp. milk
- 1 cup breadcrumbs
- 1 tbsp. fresh thyme
- 1 tbsp. fresh parsley
- 1 tbsp. olive oil
- Preheat oven to 375 degrees.
- Trim fat off pork chops.
- Place flour in a small bowl.

- In a third bowl or plate mix together bread crumbs and herbs.
- Heat olive oil in a medium-large saucepan over medium heat.
- Coat each chop in flour, shaking off excess.
- Next coat in the egg/milk mixture, shaking off excess.
- Last coat with breadcrumb/herb mixture.
- Sear each chop for 2 minutes per side.
- Place all chops in a large baking dish.
- Add some water and place the dish in the oven.
- Cook for an hour and a half, continuing to add water to the dish so they don't burn.
