Welp it is officially Sunday night. This weekend was full of derby parties, showers, graduation parties, birthday parties and Cinco de Mayo. Not busy at alllll. However, tonight was spent in my fav spot - kitchen with a glass of wine in my hand. I can't wait to share with you my Shrimp Scampi. The lighter sauce and fresh shrimp make this pasta dish scream summer.
You will need shrimp, butter, linguine, olive oil, shallots, garlic, red pepper flakes, white wine, lemon juice, fresh parsley, salt and pepper. And fresh Parm bc duh.
Prepare pasta according to package directions. In a large skillet melt butter and olive oil. Sauté garlic and shallots for a few minutes.
Peel and devein shrimp (simply pull off the outside covering with legs/tails then remove the black line that you'll see just underneath the surface that runs the length of the shrimp). Season generously with salt and pepper. Add to the skillet tossing with shallots and garlic and cook for about 3 minutes or until they have a nice pink/golden color.
Remove shrimp to a plate.
Add wine and fresh lemon juice. Bring to a slight boil.
Add red pepper flakes, salt, pepper and remaining butter and olive oil. Bring to boil, reduce heat and simmer for a few minutes.
Add pasta and shrimp to skillet and toss to coat. Add more red pepper flakes, salt and pepper to your taste if desired.
Top with fresh parsley and of COURSE fresh Parm. Enjoy!! Have a fabulous week my friends!!
- 1 pound shrimp, peeled and deveined
- 1 pound linguine
- 3 tbsp. butter
- 2 tbsp. olive oil
- 1-2 shallots, minced
- 3 garlic cloves, minced
- ¼ - ½ tsp. red pepper flakes (adjust or omit depending on how much spice you like)
- ½ cup dry white wine (or chicken broth)
- juice of one lemon
- 2 tbsp. fresh parsley, chopped
- salt & pepper
- Fresh Parm
- Prepare pasta according to package directions.
- In a large skillet over medium heat melt 2 tbsp. butter and 1 tbsp. olive oil. Once butter is melted add shallot and garlic.
- Saute for about 4-5 minutes or until tender.
- Season shrimp with salt & pepper and add to skillet. Cook until pink about 3 minutes.
- Remove shrimp to a plate.
- Add wine and lemon juice. Bring to boil.
- Add red pepper flakes, salt, pepper and remaining butter and olive oil. Reduce heat. Simmer for a few minutes.
- Add cooked pasta and shrimp to skillet and toss to incorporate. Add more salt, pepper and/or red pepper flakes to your taste if desired.
- Top with fresh parsley and Parm.
