What's in Strawberry Watermelon Summer Salad?
Aside from the obvious (strawberries and watermelon) this salad also contains fresh arugula, spinach, avocado, blueberries, chopped pecans and sunflower seeds. There are so many different flavors and textures, but they all compliment one another beautifully. Maybe as beautifully as this salad looks!
What about salad dressing?
I recommend a balsamic vinaigrette to accompany this dish. You can make your own or use store bought. If I'm preparing for an event, I like to make my own. I mix together balsamic vinegar, olive oil, honey, dijon mustard, garlic, salt and pepper. If I'm tossing this together for lunch or dinner after a hectic work day, I'll use store bought. Simply 60 Balsamic Vinaigrette is a great option for a light, flavorful store bought option.
What goes with this salad?
As mentioned, I like this salad all on it's own or you can make it to accompany a larger meal. It's perfect for any summer cookout or bbq you have coming up! I recommend serving with the dressing on the side, so that it won't become soggy. Here's a couple options on what you can serve it with.

Ingredients
- 3 cups baby spinach
- 3 cups arugula
- 1 cup strawberry sliced
- 1 cup watermelon sliced, seeds removed
- ½ cup blueberries
- 1 avocado sliced
