I feel like I was just complaining about it being Monday, and it's already Thursday night! This week flew by! (For me at least.) I have a fun weekend trip planned to go see Florida Georgia Line in concert in Indianapolis with my boyfriend who got me tickets for my birthday - he did good! I've never seen them live, so I'm really excited! I love pretty much all music, but country concerts are my fav. We're making a whole weekend out of it, and I've never been out in Indianapolis before so if any of you have suggestions as to where we should go please comment! Since I'm going out of town tomorrow I just had leftovers for dinner tonight. And let me tell you guys this recipe is perfect for tasty leftovers!
I totally stole this Stuffed Pepper Casserole recipe from my mom who has made it as long as I can remember. Although when I was little I hated the green peppers in it, so I remember she made me my own version without them. Kind of defeats the purpose of stuffed PEPPER casserole, but there is no reasoning with children, especially ones as stubborn as I was. (Thanks Mom!) Now that I've grown up I love peppers! And if you do too try out this recipe! All you will need is ground beef (90-96% fat free), cooked rice, chopped green pepper, diced yellow onion, minced garlic cloves, tomato sauce, chili powder, cayenne, salt, and pepper.
As you chop your fresh vegetables, preheat your oven to 375 degrees. Cook your rice according to package directions* and brown your ground beef in a large skillet over medium heat. Add your vegetables to the skillet and sauté in the grease from the beef for about 5 more minutes.
*I use a rice maker to cook my rice. It's one of my favorite kitchen gadgets (and I have a lot of kitchen gadgets). If you make a lot of rice I HIGHLY recommend getting one! They're super cheap on Amazon!
Add your tomato sauce to the skillet and stir.
Once your rice is cooked mix together with your ground beef mixture in a medium-sized baking dish. I like to top my casserole with a little Parmesan cheese as opposed to cheddar. Either work great though!
Bake for about an hour.
This dish has a little kick of spice, but I wouldn't call it "spicy". Adjust the chili powder/cayenne to fit your taste. It has great flavor and isn't too dry or too moist. And like I said, you'll have plenty of leftovers! Happy almost Friday and Go Cavs!
- 1 lb ground beef (90-96% fat free)

- ¼ cup yellow onion, diced
- ½ cup green pepper, chopped
- ¾ of a 28 oz can tomato sauce
- 1 cup rice (dry)
- ½ tsp. ground cayenne
- 1 tsp. chili powder
- 1 tsp. salt
- 1 tsp. ground pepper
- 2 tbsp. Parmesan cheese
- Preheat oven to 375 degrees.
- Prepare rice according to package directions.
- Brown ground beef in a large skillet over medium heat.
- Add garlic, onion, and green pepper and sauté for 5 minutes.
- Add tomato sauce and stir.
- Once rice is cooked mix together with ground beef mixture in a medium-sized baking dish.
- Sprinkle Parmesan or shredded cheddar cheese over the top.
- Bake for one hour.
