You guys. Half the reason I like to cook with thyme is to come up with puny names for my dishes and cocktails. Just kidding. (I'm not actually kidding.) It is Sunday evening and we're on the verge of another crazy work week! But the sun is out, I'm drinking a glass of one of my very favorite inexpensive bottles of wine (If You See Kay), and I'm getting ready to spend some time in the kitchen so things are good.
Tonight I'd like to share with you a simple but delicious side dish recipe. Simply preheat oven to 400. Spray a baking sheet with nonstick spray. Be sure to peel and chop greens off the carrots. Drizzle with olive oil and season with salt and pepper. Toss sprigs of thyme over carrots and roast for 30 minutes or until fork tender. Enjoy - have a great week!
- ½ - 1 lb carrots, peeled and trimmed
- 1 tbsp. olive oil
- salt
- fresh ground pepper
- 4-6 sprigs of thyme
- Preheat oven to 400.
- Spray baking sheet with nonstick.
- Drizzle carrots with olive oil.
- Season with salt and pepper.
- Lay thyme over top.
- Roast for 30 minutes.
