So happy its the weekend. I actually love Saturdays when its freezing out, because it gives me an excuse to snuggle up on my couch in a comfy blanket, watching a movie or reading a good book. Today I'm doing just that but instead of a book I'm writing to you all and my blanket is complete with three kittens. I may never leave my house. 😉 Today I'd like to share with you my super easy traditional Bruschetta recipe. Bruschetta is an Italian appetizer which is traditionally made with toasted Italian bread, olive oil, garlic, and tomatoes. I like to add cheese as well, because everything is better with cheese in my opinion.
Cut Italian loaf into ⅓ inch slices. Rub with olive oil on both sides and bake for 15-20 minutes at 350 degrees - or until crispy. Another option is to grill the bread, however with how cold it's been outside I chose to use the oven and not freeze my butt off. In a small bowl mix together chopped tomatoes, minced garlic, fresh mozzarella, sliced basil, balsamic vinegar, salt, and pepper. Allow to sit for about 10 minutes. Spoon a little bit on each crostini. You could serve now, however I like to throw them back in the oven for 3-5 minutes for the cheese to melt. Remove from oven, top with Parmesan, and serve! This makes a great appetizer for holiday parties or really anytime!
- 1 baguette, sliced into ⅓ inch slices
- ½ cup olive oil
- 1 tsp. garlic, minced
- 2-3 roma tomatoes. diced
- ¼ cup fresh basil, sliced
- 4 oz fresh mozzarella, chopped into small pieces
- 2 tbsp. balsamic vinegar
- ½ tsp. salt
- ½ tsp. pepper
- Parmesan for topping
- Preheat oven to 350 degrees.
- Rub both sides of crostinis with olive oil.
- Bake for 15-20 minutes or until fully toasted and crispy.
- In a small bowl mix together tomatoes, basil, mozzarella, balsamic vinegar, salt, and pepper.
- Allow to sit for 10 minutes.
- Spoon a small amount on each crostini.
- Bake for another 3-5 minutes or until cheese has melted.
- Top with Parmesan.
