Anyone else have to work today? I did, and I'm not happy about it! It's nice driving to work with barely any traffic on the road, however it's also a reminder that everyone else is at home. Jealous. I, at least, had a great weekend! I did a wine tasting, went to the wedding show with my mom and my friend Carrie, celebrated my future father-in-law's birthday, and went to brunch on both Saturday AND Sunday. Can't beat that! I spent lots of time in the kitchen Sunday evening (my favorite place to spend Sundays) coming up with lots of healthy and quick weekday recipes for you guys. This wrap is seriously the easiest thing to make.
All you need are the ingredients listed in the name! (It's Monday, and I'm not the most creative right now, ha.) Turkey, roasted red peppers, spinach, cream cheese and a medium-sized tortilla. I like to use the cracked pepper turkey, and the ⅓ reduced fat cream cheese to make this wrap a little more healthy. I've used the ⅓ reduced fat for so long now, I actually like the taste better than the original. If you're doing a low-carb diet you can use the La Tortilla low-carb wraps which have about 5 g net carbs. Or you could buy thicker cut turkey and make these into turkey roll-ups! All ways are delicious. This is an easy meal to bring to work for lunch or to throw together quickly for dinner on a busy weeknight. Enjoy!
- 4 oz turkey breast
- 1 tbsp. ⅓ reduced fat cream cheese
- ⅓ cup raw baby spinach
- ⅓ cup roasted red peppers, sliced
- 1 medium-sized tortilla
- Warm tortilla in oven or microwave briefly to make it easier to roll (optional).
- Spread cream cheese on tortilla.
- Top with turkey, spinach, and peppers.
- Roll and slice in half.
