Looking for something sweet to make your sweetheart for Valentine's Day? There's just something about baking a treat from scratch that is extra special to me. It's easy to purchase something for your Valentine, but putting time, effort, and love into something you personally created shows someone you really care. Plus is it just me or are guys so hard to buy for on this holiday?! I feel like I used up most of my good ideas for Brad in our first five years together. If there's a gift you can go wrong with for a guy, it's something they can eat. 😉 This year I decided to pick him up several smaller gifts and bake him these amazing Vanilla Cupcakes with Vanilla Cream Cheese Frosting!
For this recipe you will need: flour, baking powder, salt, butter, sugar, eggs, vanilla extract, milk, powdered sugar, cream cheese, and of course sprinkles!
**Plan ahead and make sure butter, milk, egg, and cheese are room temperature.**
Preheat oven to 350. Line tins with cupcake wrappers. Start by combing your flour, baking powder, and salt in a small bowl. In the bowl of your mixer beat together butter and sugar until light and fluffy (5 minutes). Beat in eggs one at a time. In another small bowl mix together milk and vanilla extract.
Slowly beat in ⅓ of your dry ingredient/flour mixture, then ⅓ of your milk/vanilla mixture. Continue alternating until you've incorporated all your ingredients. Beat until smooth (see above picture).
Pour batter into cupcake foils about ⅔ full as they will rise while baking. Bake for 16-18 minutes or until cupcakes pass the toothpick test. Remove from oven to a wire rack to cool completely (about 45 minutes - 1 hour).
Prepare your ifrosting while your cupcakes cool (and try not to eat it all - I dare you). In your mixing bowl, beat butter, powdered sugar, vanilla, and cream cheese on high for 3 minutes.
Pipe frosting onto cupcakes using a pastry bag fitted with a large tip. (If you don't have a pastry bag cut the corner off a plastic sandwich bag and use this. Definitely more messy/less precise but works in a pinch! Decorate with sprinkles however you'd like! I actually made these for both my fiancé's birthday and Valentine's Day so I decorated half with birthday sprinkles and the other half with red Valentine's Day themed sprinkles. - 2¼ cups flour
- 2½ tsp. baking powder
- ¼ tsp. salt
- 8 tablespoon butter, at room temperature
- 2 cups sugar
- 2 large eggs, at room temperature
- 2¼ tsp. vanilla
- 1¼ cups whole milk, at room temperature
- Frosting (5½ Tbsp. butter, at room temperature, 5½ cups powdered sugar ½ tsp. vanilla
- 8 oz. cream cheese, at room temperature)
- Preheat oven to 350.
- Line muffin tins with cupcake foils.
- Add flour, baking powder, and salt to a small bowl and combine.
- Beat sugar and butter in a mixing bowl for 3-5 minutes until fluffy.
- Beat in eggs one at a time.
- Mix together milk and vanilla in a small bowl.
- Beat in ⅓ cup of your flour mixture then ⅓ cup your milk mixture and continue alternating until all ingredients are added and batter is smooth.
- Pour batter into tins filling ⅔ of the way.
- Bake for 16-18 minutes or until cupcakes pass the toothpick test.
- Allow to cool on wire rack fully.
- Prepare frosting by beating all ingredients in a mixing bowl until smooth.
- Pipe frosting onto cooled cupcakes using a pastry bag.
- Decorate with sprinkles.
