- French baguette cut into ⅓-inch slices
- 2 tablespoon olive oil
- 1 wheel Brie sliced to fit crostini, rind removed
- 3 oz Prosciutto sliced and rolled
- 1 small can cranberry sauce (or easy homemade, see note in post)
- fresh mint
- ¼ cup balsamic vinegar
- 2 tablespoon brown sugar
- toothpicks
Preheat oven to 400 degrees.
Brush crostini with olive oil.
Toast in oven for about 8-10 minutes flipping halfway through.
Meanwhile heat balsamic vinegar and brown sugar in small saucepan over medium heat. Bring to simmer, stirring to dissolve sugar. Simmer on low 5 minutes or until sauce has thickened. Set aside to cool.
Allow crostini to cool then spread with cranberry sauce.
Add Brie.
Then Prosciutto.
Top with small mint leaf. Secure with toothpick.
Drizzle with balsamic glaze right before serving.
