Caprese Pasta Salad

Easy, delicious Caprese Pasta Salad recipe. Packed full of tomatoes, mozzarella balls, fresh basil and noodles and tossed with homemade balsamic vinaigrette.

Ingredients
  

  • 16 oz Ditalini pasta (or any small noodle) cooked according to package directions
  • 8 oz Mozzarella balls
  • 2 tablespoon fresh basil chopped
  • 1 ½ cups grape or cherry tomatoes halved or quartered
  • ¼ cup balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • 2 teaspoon honey
  • 1 tablespoon dijon mustard
  • ½ teaspoon garlic powder
  • cup olive oil
  • salt & pepper to taste

Instructions
 

  • Add balsamic, lemon juice, honey, dijon mustard, olive oil, garlic powder, salt and pepper to a salad shaker and shaker well to combine. Or whisk together in small bowl. Set aside.
  • Once pasta is cooked rinse with cold water and drain. Add to large bowl with tomatoes, basil and mozzarella.
  • Drizzle balsamic over the top and mix to combine.
  • Chill in refrigerator until ready to serve.
