Simple Radish Salad with Honey Mustard Vinaigrette

Ingredients
  

  • 6 radishes cleaned well, sliced thin
  • 3 cups arugula rinsed well
  • ¼ cup pecan pieces
  • 10 fresh mint leaves rinsed and sliced
  • ¼ cup red wine vinegar
  • ½ cup olive oil extra virgin
  • 1 tablespoon fresh lemon juice about ½ lemon
  • 1 tablespoon dijon mustard
  • ½ teaspoon honey

Instructions
 

  • For honey mustard vinaigrette: in a small bowl or salad dressing shaker add red wine vinegar, olive oil, lemon juice, mustard and honey. Whisk together or shake well. Set aside.
  • In a large bowl toss together arugula, radish, pecans, and mint.
  • Plate and drizzle with honey mustard vinaigrette.

Notes

Note:  Raw/uncooked radishes are used in this recipe. Soak the sliced radishes in some salt water to crisp them up even more while releasing some of the spiciness.
Substitutions/Variations
There are many ways you can customize this Radish Salad. Not a fan of arugula? Swap the base with spinach or kale. Walnuts and pine nuts are delicious alternatives to pecans. Other herbs like basil, cilantro, or thyme would be tasty additions. English Cucumbers build on the crisp, refreshing theme. And cheese! I personally love feta, Parmesan, or goat cheese with this salad.
